Pot and column stills organize separation differently
A pot still distills a measured batch: it is filled, run, emptied, and prepared for the next charge. A continuous column still accepts a continuing feed and separates it across multiple stages while spirit and spent liquid leave the system. Either can make whiskey. Still design, operating choices, distillation proof, grain, fermentation, maturation, and blending matter more than a simple quality ranking.
“Pot-distilled” and “column-distilled” are therefore useful process facts, but poor shortcuts for better and worse. A pot still does not guarantee character. A column still does not guarantee neutrality. Both are controlled separation systems, and both can be configured to make different styles of new make.
This is a guide to commercial whiskey production, not an operating manual. Distillation involves flammable alcohol vapour and regulated production; it belongs in licensed facilities with trained staff and purpose-built equipment.

The table compares broad architectures. Real distilleries blur the edges with pot stills that include rectifying features, batch columns, continuous doublers, thumpers, and systems that combine a column with a second distillation vessel.
How does a pot still work as a batch process?
A commercial pot-still run begins with a defined volume of fermented liquid. The still processes that charge, the composition of the vapour and collected liquid changes over the run, and the distiller separates portions according to the facility's specification. When the batch is complete, the still is emptied and made ready for another charge.
A current GEA technical handout, Energy efficiency meets tradition, describes double-distilled pot whisky as using a wash still followed by a spirit still. It characterises the operation as fill, distil, empty, and clean. For triple distillation, it adds a third batch stage.
That is a common arrangement, not a rule that every pot-distilled whiskey must pass through exactly two or three pots. A producer can use different still sequences and internal designs where its category rules allow them.
The peer-reviewed University of Kentucky paper Lab-Scale Methodology for New-Make Bourbon Whiskey Production used a first copper pot-still pass and a second batch distillation in a controlled research method. Its purpose was repeatable research, not a sensory contest between still families. It does, however, make the batch logic clear: successive passes can perform different separation jobs.
For a bottle reader, “pot distilled” still leaves several questions open: how many passes, which vessels, what shapes, what copper contact, what reflux, what selection policy, and what final distillation proof?
How does a continuous column still work?
A continuous system performs separation while fermented feed continues to enter. Instead of completing one pot charge before the next begins, the distillery maintains flows through vertical sections containing trays or other contacting structures. Vapour and liquid meet repeatedly across those stages, and the plant withdraws spirit and other streams at designed locations.
GEA's handout diagrams two common arrangements for grain whisky: a two-column Coffey system with an analyser and rectifier, and a three-column system with a beer column, extractive-distillation column, and rectifier. The document is useful precisely because it shows that “column still” does not mean one identical tower.
The Scotch Whisky Association's Cereals Technical Note says grain Scotch whisky is typically distilled in a continuous column, or patent, still. The word typically matters: it describes prevailing production rather than making every grain whisky fact interchangeable with the equipment name.
Columns give the operator multiple design and control choices. The number of stages, feed point, spirit draw, removal of side streams, heat input, flow, and reflux strategy can change the separation. Those choices are why a column can be operated toward a lighter spirit without proving that every column-made whiskey is neutral.
Is a column still always one distillation?
No. Counting vessels, columns, or passes is not as simple as counting the word still.
A continuous plant can separate across many stages and more than one column during one sustained production run. An American distillery may then use a doubler or thumper as a second step. A pot distillery may move the output of one batch still into another for a second or third distillation.
The University of Kentucky paper states that bourbon can be made with a pot still, a column still, or a combination in which a column feeds a doubler. New Riff's current whiskey-making process gives a live producer example: it lists a 60-foot copper column still followed by a continuous doubler.
Neither description turns into a universal recipe. “Column plus doubler” identifies an architecture, not the precise proof change, retention of particular congeners, or flavor of every release.
When a label says “double distilled,” look for the producer's process diagram before assuming it means two traditional pot stills. The statement may count stages differently from the picture in your head.
Does federal bourbon law require one still type?
No. The current U.S. whisky table in 27 CFR 5.143 defines bourbon through its grain source, maximum distillation proof, barrel entry proof, storage in charred new oak, and limits on materials. It does not require a pot still or prohibit a column still.
Bourbon must be distilled at 160 proof or less and enter charred new oak at 125 proof or less. Those are process limits, not equipment instructions. A pot still does not excuse a spirit from the proof limit, and a column still does not prevent a spirit from meeting it.

Light whisky occupies a different federal type and is distilled above 160 but below 190 proof. You cannot identify light whisky merely by seeing a column in a distillery photograph; you need the product's type and production record.

When does the still type define a category?
The answer changes by jurisdiction and protected style. In Scotch whisky, equipment can be part of the category boundary.
The Scotch Whisky Association's current Guidance for Bottlers and Producers defines Single Malt Scotch Whisky as made from water and malted barley at one distillery by batch distillation in pot stills. That makes pot stills and batch operation legally relevant to the protected category, not merely romantic production language.
Single Grain Scotch Whisky has a different category definition. The SWA's technical note says it is typically made with whole unmalted cereals plus malted barley and distilled in a continuous column still. Grain whisky can then serve as a component in Blended Scotch Whisky.
Do not carry the Scotch rule into the U.S. bourbon aisle or assume an Irish, Japanese, or Canadian label uses the same category logic. Start with the jurisdiction and formal product name, then check its current technical file or regulation.
Does a pot still make heavier or more flavorful whiskey?
Pot-still production is often associated with a more congener-rich new make, while continuous grain-whisky plants are often operated toward lighter spirit. That is a useful description of common styles, not a law of the hardware.
The University of Kentucky paper repeats the broad contrast between highly flavored batch spirit and lighter continuous-still spirit. In the same section, it also notes that bourbon commonly combines a column with a doubler. The combination is a reminder that distillers design systems around a target, rather than accepting one fixed outcome from a silhouette.
Several choices can shift the result:
- fermented wash composition;
- distillation proof;
- number and design of separation stages;
- reflux and copper contact;
- the portions selected or removed;
- whether a second still or doubler is used;
- barrel type, entry proof, age, selection, and blending after distillation.
The finished whiskey reflects all of them. Barrel maturation can soften, add, remove, and transform aromas over years. A consumer tasting an aged pot-still whiskey beside an aged column-still whiskey is comparing two complete production histories, not isolated machines.
Is a column still only for neutral spirit?
No. A column can be designed or operated for different degrees of separation. Federal U.S. rules provide a useful legal boundary: whisky must be distilled below 190 proof, while named types impose lower limits where specified. Neutral spirit and whiskey are not synonyms for column and pot.
Likewise, a pot still can produce a relatively light new make when its design and operation encourage more separation, and a column system can retain more character when configured for that target. Equipment creates possibilities; the chosen operating specification determines which are used.
This is why “column distilled” should not be read as “vodka-like,” and “pot distilled” should not be read as “rustic” or “full flavored.” Those are conclusions that require evidence from the actual spirit.
Which still is more efficient?
Continuous operation can provide sustained throughput without stopping to empty and recharge a pot after every batch. Batch operation, by definition, has a repeating cycle and changing demand across the run.
GEA's handout describes continuous grain-whisky production and discontinuous pot-whisky production as different energy-management problems. It also identifies operational flexibility as a feature of the batch system. That is a more precise comparison than “columns are efficient and pots are not.” Efficiency depends on plant scale, heat recovery, uptime, cleaning, product specification, and how the distillery uses its equipment.
A small production campaign may value batch flexibility. A large grain-whisky plant may value continuous throughput. Neither business case tells you which mature whiskey you will prefer.
What can you learn from a bottle or producer page?
Still type is not always stated on a U.S. whiskey label. If it matters to you, look for a current distillery process page or technical sheet and separate verified facts from atmospheric photography.
Record these details when available:
- pot, column, hybrid, or named still design;
- batch or continuous operation;
- number and order of vessels or columns;
- copper construction or copper contact;
- doubler or thumper use;
- stated distillation proof;
- grain recipe and fermentation details;
- barrel entry proof, barrel type, age, and blending.
A photograph of a copper pot proves that the distillery owns or displays one. It does not prove that the bottle in your hand was distilled in it. Release-specific documentation is stronger evidence.
A seven-step still comparison
- Read the formal whiskey type and country. Equipment rules vary by category and jurisdiction.
- Identify batch, continuous, or hybrid operation. Do not force a combined plant into a two-box story.
- Map the sequence. Note each pot, column, doubler, or thumper the producer actually names.
- Find the distillation proof. It says more about separation than the equipment name alone.
- Keep the mash bill visible. Grain and fermentation enter the still before equipment can shape the new make.
- Add maturation and blending. The bottled result is not raw distillate.
- State preference narrowly. Prefer a particular whiskey, not a still family in the abstract.
Pot and column stills are different ways to organise a difficult separation. The interesting question is not which outline looks more traditional. It is how a distillery uses the system it has to make the spirit it intends.
